Crispy Golden Samosa Dumplings

Crispy, savoury, spicy and DELICIOUS! They taste just like the inside of a samosa but better! I used the @sunlitelowcarbpotatoes low carb potatoes for this recipe and they give the dumplings the most delicious, moist texture on the inside! Sunlite Low Carb Potatoes have at least 25% less carbohydrates than a regular potato, but with the same great taste & texture! They're all-purpose with a creamy, yellow flesh - making them good for just about anything! Find the recipe below xx

Ingredients


Samosa Dumplings:

  • 2 large (about 550g) Sunlite low-carb potatoes
  • 2 spring onions, thinly sliced into rounds
  • 2 Tbsp each finely chopped chives & mint
  • 1 tsp each curry powder, black mustard seeds & cumin seeds
  • 3⁄4 cup grated cheese (I used gruyere)
  • 1⁄3 cup plain breadcrumbs
  • 2 Tbsp plain flour
  • Neutral oil, for frying

Coconut & Mint Chutney:

  • 1 handful fresh mint leaves (about 1 cup)
  • 1⁄4 cup unsweetened Greek yogurt
  • 2 Tbsp coconut cream
  • 1 fat clove garlic, peeled
  • 1 thumbnail-sized piece ginger, chopped
  • Juice of 1⁄2 lime (about 1 Tbsp juice)
  • 1⁄2 tsp honey or maple syrup
  • 1⁄4 tsp each cumin seeds & fine salt
  • Pickled onion and fried curry leaves, to garnish (optional)

Instructions


Dumplings: Prick the potatoes several times over with a fork. Place in a microwave-safe bowl and microwave for 9-12 minutes, until the skin is wrinkled and they are soft to squeeze. Set aside until cool enough to handle. Squish and break up the potatoes with your hands. Add the flesh to a large bowl, along with the spring onion, herbs, spices, cheese, creadcrumbs, flour and 1⁄2 tsp fine salt. Mix everything together with your hands, until the mixture forms a coarse ‘dough-like’ consistency and holds together when you squeeze it between your fingertips (if your mixture is too wet, add another 1-2 Tbsp plain flour). It should still be chunky and slightly crumbly for the best texture once fried.

Heat about 2cm neutral oil in a medium frying-pan on medium high heat. Once the oil is hot, fry heaped tablespoons of the potato mixture - lightly squeeze the mizture between your figertips before dropping in the oil, so they don’t fall apart in the pan. Cook the dumplings, in batches, for about 1-2 minutes each side, until golden brown and cooked through.

Serve them hot with the coconut mint chutney, pickled onions and some fried curry leaves (optional).

Chutney: Add all the ingredients to a nutribullet (or use a stick blender) and blend together, until smooth and creamy.
