Ingredients

1 tbsp olive oil
- 600 g beef mince
- 300 g Carb-Lite potatoes diced
- 2 carrots diced
- 1 onion finely chopped
- 2 cloves of garlic crushed
- 1 × 400g can of chopped tomatoes
- ½ C beef stock
- 1 tbsp tomato paste
- 1½ tsp ground cumin
- 2 tsp smoked paprika
- 1½ tsp dried oregano
- ½ tsp chilli flakes
- ⅓ C raisins
- ⅓ C green olives sliced
- 4 tortillas
- 1 handful fresh coriander
Instructions
Step 1
In a large frying pan, heat a splash of olive oil over medium-high heat. Add the mince to the pan and quickly brown the meat. Transfer to a bowl and set aside.
Step 2
Return the pan to the heat and add a little more oil if needed as well as potatoes, carrots, onion and garlic, cook for 5 minutes or so.
Step 3
Mix in the mince, tomatoes, stock, tomato paste, cumin, smoked paprika, oregano, chilli and sprinkle with salt and black pepper.
Step 4
Reduce heat to low, cover and simmer the mixture for about 20 minutes, or until the vegetables are tender. Add a little more stock or water if the mixture becomes too dry.
Step 5
Stir in the raisins and olives. Cook for an additional 5 minutes.
Step 6
Warm the tortillas either in a toasted sandwich press or microwave.
Step 7
Serve the picadillo with tortillas alongside and a sprinkle of coriander.
