Thai Style Chicken & Potato Salad

Ingredients

500 g Carb-Lite potatoes chopped into 2.5cm chunks
- 2 tbsp vegetable oil
- 550 g chicken breasts (boneless, skin off)
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 clove of garlic crushed
- 1 red chilli finely sliced (adjust to taste)
- 1 red onion thinly sliced (use less if large)
- 1 carrot cut into small sticks
- ½ handful fresh coriander chopped
- ½ handful fresh mint chopped
- 100 g salad mix for serving
- 2 spring onions sliced
- ¼ C unsalted roasted peanuts roughly chopped (optional)
Instructions
Step 1
Place the potatoes in a pot of salted water and bring to a boil. Cook until tender but still firm, about 10-12 minutes. Drain and set aside.
Step 2
Heat a film of oil in a pan over medium heat. Season the chicken with salt and pepper, then cook until golden brown on both sides and fully cooked through (about 6-7 minutes per side). Once cooked, let the chicken rest for a few minutes, then slice thinly.
Step 3
To make the dressing, in a bowl, whisk together the fish sauce, lime juice, soy sauce, brown sugar, garlic, and the remaining oil. Add the chilli.
Step 4
In a large mixing bowl, combine the potatoes, chicken slices, red onion, carrot, coriander, mint, salad leaves and spring onions.
Step 5
Pour over the dressing and gently toss to coat everything evenly. Divide between plates and sprinkle with chopped peanuts.
