Korean Beef with Warm Potato Salad

Ingredients

1 pear grated
- 4 cloves of garlic crushed
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp brown sugar
- 3 tbsp Gochujang paste
- 600 g beef sirloin/porterhouse steak trimmed and thinly sliced
- 2 spring onions chopped
- 1 tbsp sesame seeds toasted
- 100 g baby spinach leaves
Potato Salad
- 500 g Carb-Lite potatoes quartered
- 1 celery stalk diced
- ½ red onion diced
- ½ C mayonnaise
- 1 tbsp mustard
- 1 tbsp runny honey
- 1 tsp apple cider vinegar
- 2 tsp Gochujang paste
Instructions
Step 1
In a bowl, combine the pear, garlic, soy sauce, sesame oil, sugar and gochujang.
Step 2
Add the beef to the marinade and mix well. Let it marinate for at least 30 minutes.
Step 3
Cook the potatoes in a pot of salted water over a medium-high heat for 10-12 minutes until just tender. Drain well.
Step 4
Place the potatoes in a salad bowl along with the celery and red onion.
Step 5
Mix together the mayonnaise, mustard, honey, apple cider vinegar and gochujang paste. Drizzle the dressing over the potatoes and toss to combine.
Step 6
Heat a frying pan over medium-high heat. Quickly cook the beef in batches until well coloured.
Step 7
Serve with beef topped with spring onions and sesame seeds and with the potato salad and spinach alongside.
