Pan fried Fish with Asparagus, Beans, and Smashed Potatoes

Ingredients

500 g Carb-Lite potatoes halfed or cut into thirds if large
- 3 tbsp plain flour
- 3 tbsp olive oil
- 600 g white fish fillets 1 fillet per serve
- 1 asparagus bunch trimmed
- 250 g green beans
- ¼ C aioli
- 1 handful Italian flat leaf parsley chopped
Instructions
Step 1
Cook the potatoes in a pot of salted water until just tender, about 15 minutes. Drain and let cool slightly.
Step 2
Place the potatoes on a chopping board and gently smash them with the back of a spoon or fork. Dust with the flour and salt and pepper.
Step 3
Heat a film of oil in a large frying pan over a medium-high heat. Fry the potatoes until golden on each side.
Step 4
At the same time bring a pot of water to the boil to cook the asparagus and beans and season the fish fillets with salt and pepper.
Step 5
Heat a film of olive oil in a large frying pan over medium-high heat.
Step 6
Sear the fish for 3 minutes on each side until golden and cooked through. Set aside.
Step 7
Cook the asparagus and beans in the pot of lightly salted water until tender but still crisp, 3-5 minutes. Drain well.
Step 8
Serve the fish with smashed potatoes, asparagus & beans plus a big dollop of aioli. Sprinkle with chopped parsley.
