500g potatoes (try Sunlite Low Carb Potatoes)
2 tablespoons honey
2 tablespoons cider vinegar
1 tablespoon oil
2 tablespoons freshly chopped mint
Boil, steam or microwave potatoes until tender. (leave the skins on)
Place honey, oil, vinegar and mint in a small saucepan and heat gently until honey is melted.
Alternatively place in a glass jar and microwave on high for 1 minute.
Pour the honey / mint over the potatoes and serve warm.
Serves four to six.
